Well this is a different post for me. Recently I have become very interested in make ahead meals. Today was my first batch and I'm excited to try it and I hope it freezes well. Any and all suggestions would be appreciated. This is the Quaker Oats recipe for meatloaf. I'm not 100% how long it should stay in the freezer but I'm just going on what I feel is best and we plan to eat it within 6 weeks. If you know a good website or any different information, please let me know....
Recipe: This recipe is for 2 lbs but I made 3 lbs so this is my modified version...
3 lbs ground beef (mine is 98% lean)
1 c. ketchup
1 c.. Quaker Oats
3/4 c. chopped onion (I get the chopped onion from the freezer section, much easier)
2 lrg eggs, beaten (I only used about 3/4 of the beaten egg)
1 1/2 T. Worcestershire sauce
I mixed all the ingredients, flattened the mixture to about an inch thickness and cute into about 3 - 4 inch squares. Then I scooped each piece up with a spatula and put them in individual freezer bags.

What a fabulous idea!! I haven't used the Quaker Oats recipe in a long time. I just throw stuff together when I make meatloaf now. I'm thinking 6 weeks is about right. Now if you had one of those machines that sucks the air out of the bags, then you might could keep it a little longer. I had one but gave it to our daughter since she seemed to need it more than me with their 4 children. Let us know how this works out!! :)
